The distillation of wine in Galicia began about 500 years ago, passing through the Jesuit monks from convent to convent, due to the ease with which the alchemists of the various religious orders eased their knowledge, other important pathways for dissemination and historical wisdom of this product was through the Camino de Santiago. Our distillery is located in a small region northeast of the Iberian Peninsula in the O Rosal area with designation of origin Albariño. An area haunted by the aromas and scents of a privileged land, caressed by breezes from the Atlantic Ocean and cooled by the dampness of the Rio Minho. Here we perform the distillation in copper stills where they are heated over low heat and the evaporation of alcohol that condenses to make them move through a coil bathed in cold water. The first steamers called heads, are discarded. The next phase is the one that produces the hearts and this for the manufacture of our spirits.
